BBQ Meatloaf is one of my most popular recipes! This version is wrapped in bacon before baking to make it even more delicious. ‘Cause I mean, let’s be honest… who doesn’t like bacon?
Like in the original version, puree veggies, and sneak them in! The pureed veggies work as a binder of sorts, but because of the BBQ sauce and the bacon, no one will even know! Trust me, I worked at a daycare feeding 300 kids a day… meatloaf never came back to the kitchen… those kiddos had happy plates every time, and they had no clue that they just had two full servings of veggies in their meatloaf! Don’t you love tricking your kids?
By wrapping the meatloaf in bacon, it takes a little bit longer to cook, and just a little finesse to wrap the bacon so that it stays in place while cooking. If you just take your time, and secure it with toothpicks, it will turn out just right every time. The bacon also makes a great guide for cutting the meatloaf into equal sized portions.
Anthony was very impressed with this meatloaf, and was kind enough to steal bacon off of my plate. Little bugger. So, switch it up next time you make meatloaf, and add a little bacon. Totally worth the extra 5 minutes it takes to make! And don’t forget those veggies; meatballs and meatloaf are the perfect time to sneak stuff in – spinach is a good one to sneak in too!
Oh ya… and as you’ll see below, I actually cooked this on my BBQ because it was way to dang hot in my kitchen. To cook in your BBQ, heat it up, and adjust the heat to what your ideal baking temperature is, then using indirect heat, place a baking dish on the grill, and close the lid. Keep your eye on the thermometer on the grill, and in 30 minutes, dinner is ready!
Here’s how you make it…
1 lb ground beef
1/4 cup bbq sauce
1/2 yellow onion (optional)
1/2 zucchini, peeled (optional)
1/2 cup plain bread crumbs
2 tsp salt
1 tsp each; black pepper, paprika and garlic powder
1/2 cup bbq sauce to top
8 slices bacon
Preheat oven to 425 degrees.
If you’re adding vegetables, puree onion and zucchini in a food processor until smooth. In a large bowl combine ground beef, egg, bbq sauce and vegetables (if using). Mix with your hands until smooth, and the veggies are evenly distributed throughout the meat
Add bread crumbs and spices and mix with your hands until well combined.
Lay bacon slices flat, overlapping a little across a baking sheet lined with parchment. Form meat into a loaf, and place on top of the bacon, lining up with the edge. Brush 1/2 cup bbq sauce over top meatloaf. Fold bacon slices over the top of the meatloaf to wrap around. Use toothpicks to hold in place if desired.
Bake meatloaf in preheat oven for 30-35 minutes. Remove from oven and let rest 5-10 minutes before slicing.
