Easy Chicken & Hummus Wrap

My husband used to be skeptical of any food that wasn’t roast beef and mashed potatoes, but over the years he has become used to trying new foods and recipes, and has grown to love foods he wouldn’t have otherwise thought of trying. One such food is hummus, which in the following recipe replaces the mayonnaise or butter he would typically smother on a wrap or bread, and adds a zesty flavour that compliments the other ingredients.You don’t have to put chicken in this wrap, but it’s a great way to use leftover roasted chicken. Actually all of the ingredients are pretty interchangeable, so if there is something you like more of, go ahead and throw more of it in and same applies to something you may be running low on. Easy Chicken & Hummus Wrap (this recipe will make 1 or 3 wraps depending on how much you put in each wrap)

  • 1/4 cup of cooked, chopped and cubed chicken
  • handful of quartered cherry tomatoes
  • 1/2 an avocado, cubed
  • 1 stick of celery, finely chopped (adds some crunchiness)
  • a few spinach leaves, trimmed and finely chopped
  • 2 tbsp of hummus + more to spread on wraps
  • 2 whole wheat wraps

Mix all of the ingredients together in a bowl with 2 tbsp of hummus. Spread approximately 1 tbsp of hummus on each wrap and then place the mixture into the centre of the wrap (leaving room at the bottom and sides) and then fold up the bottom and sides of the wrap. Serve immediately. Enjoy!
