Maple Scotch Cookies

James and I decided to make chocolate chip cookies one day, but things didn’t go as planned!

Firstly, I ran out of vanilla extract. I don’t know how that happened. Secondly, I didn’t have chocolate chips. The final blow was I didn’t have enough butter! I was on a roll!!

But what we ended up making, were some of the best cookies James and I have ever made. Even Chris loved them! I didn’t have a name for them, so Chris called them Maple Scotch Cookies.

Maple Scotch cookies

What you will need:

  • 1/2 cup butter; softened
  • 1/4 cup coconut oil
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 tsp. maple extract
  • 1 large egg
  • 2 cups of flour
  • 1 tsp. baking soda
  • pinch of salt
  • 1 bag of Butterscotch chips

Cream together butter, oil and sugar. Mix in extract, and egg. Combine flour, baking soda and salt and add to wet ingredients. Finally fold in butterscotch chips.

*Note* The cookie dough will be dry. This is OK!

Drop by teaspoon onto un greased cookie sheet and bake at 375 degrees for 11-12 minutes. Cool slightly and move to wire rack.

This makes about 2 dozen or so cookies.

These little gems were a huge hit in our home! I even served these with some vanilla ice cream. Makes a perfect little treat.

Too bad my computer doesn’t have the ability to “scratch and sniff” 🙂 I’ve totally been there – half way through a recipe only to find out that key ingredients are missing!
