Making Mornings Simple and Healthy with Egg Muffins

Mornings are hectic in our house. Lunches need to be packed for four people (and everyone has different likes!), breakfast needs to be made, beds need to be made, the dog needs to be walked and all four of us need to get dressed for the day. We have looked at ways to make this easier for us and have started preparing the majority of our lunches in the evening and storing them in the bottom of the fridge for the next day. Some mornings are smooth and others not so much. Those not so good mornings we tend to slide on breakfast (more so for Mommy and Daddy!) as we struggle with tears or wardrobe problems (what do you mean I can’t dress as Captain America everyday?!!). These healthy, vegetable packed egg muffins have simplified our morning routine and allow us to eat healthy no matter how busy the morning has been.

For this recipe you will need:

  • Six extra large eggs
  • One cup of shredded zucchini
  • One cup of shredded carrot
  • One cup of finely cut red peppers

Directions

Preheat your oven to 350F.

Shred the zucchini and carrot (I used one medium of each and it turned out to be roughly one cup of each). Cut up your red pepper – for one cup I used roughly 3/4 of a medium sized red pepper.

Crack the eggs and add in about 1tbsp of water. Mix together.

Add in the vegetables and stir until the vegetables are evenly dispersed throughout.

Here you can either grease the muffin pan (this recipe makes 12 muffins so only use one pan) or if you hate cleaning up as much as I do add the cupcake liners into the tray. Pour in an equal amount of the mixture into each tray.

Place in your oven and cook for fifteen to twenty minutes. As every oven varies take a quick peek at the fifteen minute mark if the eggs look cooked take it out and if not cook for the additional five minutes.

I store the extra egg muffins in the fridge and take these with me to work to ensure I am eating a healthy breakfast even on the busiest of days. It has made a huge difference for me! The egg muffins are packed full of vegetables and protein to keep you full until snack time (or they make the perfect snack!).
