One of my favorite things about living in Colorado is all of the fresh, delicious Mexican food we have around! One of my favorite condiments on any Mexican dish is pico de gallo – I love the freshness of the tomatoes and cilantro with the spiciness of the jalapeños and my favorite part of all, the fresh lime squeezed over the top.
This quick and fresh pico de gallo recipe is perfect for serving with tortilla chips as an appetizer or tops your favorite Mexican meals like chicken quesadillas and turkey tacos wonderfully! Whip up fresh pico de gallo tonight in only 5 minutes, and watch your family gobble down the deliciousness!
Ingredients:
1 lb roma tomatoes, seeds removed and finely diced
1 onion (red preferably), finely minced
2-3 cloves garlic, finely minced
1 jalapeno, seeds and ribs removed and finely diced
1 lime, juiced
1/2 bunch cilantro, finely minced
1 tbsp salt
1/2 tbsp black pepper
1 tsp cumin
Mix all ingredients in a bowl, and place in the refrigerator for at least 30 minutes before serving.
