With the warm weather upon us, it is important to stay cool and hydrated. Our family loves to enjoy summertime snacks, with ice cream being high up on our list! How can you resist a cold ice cream cone on a hot day? It’s like the two go hand in hand.
What I don’t like is all the extra, unnecessary ingredients. I was surprised to find out just how easy it is to make your own homemade ice cream. Not only does this help your budget but you will also be making a healthier food choice.
This easy to make ice cream recipe makes enough ice cream for two people. Double it up if you need to!
What You Will Need:
- A food processor (we have a mini one which is perfect for our four person household)
- 1 Frozen banana
- 6-7 sliced frozen strawberries
Directions
In advance, cut up your banana in slices. Place them in a baggie and then into the freezer. During the summer we usually have three to four bags frozen at any given time (especially since bananas are great for baking).
After your bananas are frozen, place them in the food processor. Using the grind option, start to break the banana down. I like to pulse the bananas versus holding the grind button.
Once they are halfway broken down, add the frozen strawberries.
Continue to use the grind option until all the frozen lumps are gone. You will be left with a smooth texture, almost like frozen yogurt. I like to serve our ice cream right away but if you want to thicken it up more, place it in the freezer for a couple of minutes (not too long or it will be too hard).
I have also tried this same recipe with 2 table spoons of vanilla flavoured almond milk and it gives it a slightly creamier taste but just as good.
The best part besides using only natural ingredients? It is low calorie because of using only one banana and a handful of strawberries, so enjoy away!
