Start your mornings off right, and stay full until lunch with a warm bowl of Maple Brown Sugar Oatmeal topped with a little more brown sugar and some pure maple syrup!
Oatmeal has always been one of my favorites, I even have it as a late night snack sometimes, but I like my oatmeal sweet! I have always been a fan of those instant packets, and Maple Brown Sugar has always been my favorite! Come to think of it, it’s my Dad’s favorite, too. He has a package every morning! But, as an adult, there is a texture issue with me and the instant packages, which is why I make my own oatmeal now.
Rolled oats are always something I have in my pantry. I use them for some of my favorite recipes like Banana Bread and Banana Flax Granola. Rolled oats take about 5 minutes to cook instead of 1 minute like the quick oats, but the extra 4 minutes is totally worth it, and I bet after trying this recipe that you’ll agree too! The rest of the ingredients for this recipe are probably things that you already have in your pantry making it a great budget breakfast!
Ingredients:
1/4 cup (half stick) butter
1/4 cup brown sugar
1 tbsp maple syrup (pure maple syrup if you have it)
pinch salt
2 cups rolled oats
3 1/2 cups water
brown sugar, for topping
maple syrup, for topping
Directions:
In a large pot over medium heat, melt butter. Once melted, add brown sugar, salt and maple syrup and let simmer for 2 minutes.
Stir in rolled oats and cook, stirring constantly for 1 minute.
Add water and stir to combine. Simmer, uncovered for 5-7 minutes until the oats have absorbed all the liquid.
Remove from heat and serve right away with extra brown sugar and maple syrup – if desired.
