We love peanut butter and jelly in this house! I get asked by Anthony almost every day if he can have a slice of toast with peanut butter and jelly or an English muffin with PB and J. But enough about my love to PB and J and more about these cookies…
I was actually inspired to make these cookies from an episode of Master Chef Junior, and saw one of the kiddos making PB & J cookies. As soon as Anthony heard what was going on in the kitchen and what I was baking, he immediately jumped on the opportunity to help (AKA mixing the ingredients and then walking off with the spoon in hand eating cookie batter). My assistant doesn’t usually stay too long, but I always enjoy the time we spend together cooking.
Take your time and use your fingers and shape the thumbprints into hearts for an extra special Valentine’s Day treat!
Ingredients:
1 1/3 cup flour
1/2 tsp baking soda
1/4 tsp salt
1 stick butter, softened
1/2 cup white sugar
1/2 cup brown sugar
2/3 cup peanut butter
1 egg
1 1/2 tsp vanilla
1/2 cup sugar, to roll cookies in
1/2 cup strawberry jam
Directions:
Preheat oven to 350 degrees.
In a medium bowl, combine flour, salt and baking soda. Set aside.
In the base of your stand mixer or in a large bowl, beat butter, white sugar and brown sugar together until light and fluffy – about 2 minutes.
Mix in peanut butter. Beat for another 30 seconds. Mix in egg and vanilla. Beat another 30 seconds.
Starting and ending with flour mixture, slowly add flour. Beat for another 30 seconds until completely mixed in.
On a sheet tray lined with parchment place 1 tbsp balls of cookie dough about 1” apart. Roll balls in sugar and with your thumb or the back of a wooden spoon, gently press a thumbprint into the center of each cookie.
Bake for 13 minutes. Remove from oven and let cool on a wire rack.
Once completely cool, carefully spoon 1 tsp jam into the thumbprint on each cookie.
