Kid-Approved French Onion Cheeseburgers

I have my neighbor Rick to thank for this recipe!  Rick lives in the condo below ours, and is always grilling up something delicious.  A few weeks ago, we could smell Rick grilling, and it smelled so good!  I wish I could share the smell with you through the internet, because it was intoxicating!  The next time we saw Rick, we asked him what he was cookin’ up, and he just simply said “French Onion Cheeseburgers!”  We told him they smelled great and we were on our way.
Last week, the weather was absolutely beautiful, so we spent the entire weekend outside.  While trying to figure out what to make for dinner, we remembered Rick’s French Onion Cheeseburgers that he made a couple weeks back.  We asked him how he made them, and he tossed me a package of french onion soup mix and said “stir this in.”  That’s it?  I thought, this can’t be right?  But, it really was that easy, I just mixed the soup mix with ground beef, formed them into patties and threw those babies on the grill!

You’d think swiss with french onion, right?  We didn’t have any swiss, so I used white American instead.  I really liked how it melted all over the burger.  And to take our French Onion Cheeseburgers from good to great, I caramelized some onions to top the burger with.  It was so simple, and so delicious.  Made a perfect summer night dinner!

I topped mine off with a little A1, and the boys used ketchup, I think?  Thanks for such a great recipe, Rick!

Ingredients:

1 lb ground beef
1 pkg french onion soup mix
1/4 lb white American cheese
1 large onion, thinly sliced
1 tbsp garlic
2 tbsp butter
1 tsp salt
1/2 tsp black pepper
1 tbsp sugar
1/4 cup chicken stock
hamburger buns

Directions:

In a small pan over medium-high heat, melt butter until shimmering.  Add onions and season with salt and pepper.

Cook onions, stirring frequently until translucent.  Stir in 1/4 cup chicken stock sugar and garlic.  Reduce heat to medium and continue cooking onions, stirring frequently for 10-15 minutes, or longer until they are soft and brown.

Meanwhile, preheat grill to high heat.

In a large bowl, combine ground beef and french onion soup mix until well combined.  Form into patties.

Cook burgers for 4-5 minutes, depending on thickness.  Flip.

Cook for 2 minutes and top each burger with sliced cheese.  Close lid and continue cooking for another 2-3 minutes.

Remove from grill and let rest 3 minutes.

Serve on a toasted bun with caramelized onions.
