20 Minute Cauliflower Fried Rice

Cauliflower Fried Rice couldn’t be easier, and takes almost no time to make!  So, if you’re looking for a quick and easy dinner, this recipe is for you!  Best of all, it’s super healthy!

I’ve been on a huge cauliflower kick lately, and wanted to try cauliflower rice, and I am glad I did!  It took about 20 minutes from start to finish to cook a chicken breast, make cauliflower “rice” and whip it all up into one delicious dish!  Cauliflower has tons of health benefits, making this recipe pretty much guilt free!  So eat it up!

Making the cauliflower rice is the first part of this recipe, and to be honest, it’s the easiest!  Simply remove the florets and drop them into the base of a food processor.  Pulse them until it resembles rice.  Remove the blade and set your “rice” aside to add to the recipe.  This part took me about 8 minutes total.  It’s the sort of healthy, quick meal like this that makes it easy to cook on weeknights and avoid the take-out routine.

Ingredients:

1 head cauliflower
1 bunch green onions, thinly sliced
1/2 tbsp fresh ginger, grated
1 tbsp fresh garlic, minced
1/2, 10 oz bag frozen peas and carrots
3 eggs
4 tbsp butter
1/4 cup soy sauce
1 tbsp brown sugar
1 chicken breast, cooked and diced (optional)

Directions:

Rice cauliflower by removing florets and placing in the bowl of a food processor. Working in batches, pulse until cauliflower resembles rice. About 6-8 pulses.

Scramble and cook eggs. Use 1 tbsp butter to cook eggs.

In a small bowl, combine soy sauce and brown sugar and set aside.

In a medium skillet over medium-high heat add remaining butter and heat until shimmering. Add green onions, garlic and onions and cook 3-4 minutes, until onions start to soften. Add riced cauliflower to pan and stir to combine. Allow cauliflower to cook for 2-3 more minutes. Add soy sauce mixture and stir to combine.

Making a well in the bottom of the pan, add cooked eggs, cooked chicken (if using) and frozen peas and carrots. Cook, stirring constantly until peas and carrots have warmed through.

Serve immediately topped with extra green onions and soy sauce, if desired.
