
Chef on the Go's Mozzarella Stuffed Meatballs

Description
Who doesn’t love a good pasta and meatballs? This recipe takes it to the next level by stuffing the meatballs with ooey gooey mozzarella! So simple and so delicious!
Ingredients
- 1 box Bucatini Pasta (or preferred pasta)
- 6 Garlic Cloves
- 1 bunch Fresh Basil
- 2 cups Tomato Sauce
- 1 lb lean Ground Beef
- 1 Egg beaten
- 1/4 cup Breadcrumbs
- 1/2 lb Mozzarella Cheese cut into 1/4 inch cubes
- Dried Basil to taste
- Dried Oregeno to taste
- 1/4 cup finely chopped Parsley
- Salt and Pepper to taste
- 1/8 cup cold water
Instructions
Cook pasta in salted boiling water until al dente (8-10 minutes). Reserve.
Dice 4 cloves of Garlic and fresh Basil, add to tomato sauce and cook for 15 minutes.
Combine rest of ingredients (Ground Beef, beaten Egg, Breadcrumbs, dried Basil, dried Oregano, 2 cloves chopped Garlic, Parley, Salt, Pepper, Cold Water), in a bowl.
Form 12-15 meatballs.
Push cube of Mozzarella into center of meatball and shape back into ball.
Pan sear meatballs with olive oil until brown, finish in oven at 350°F until fully cooked.
Add pasta to pan with sauce and meatballs, cook together.
Notes
Pasta can be cooked in advance, just return to boiling water to reheat!
