I was having people over last minute and didn’t feel like running yet again to a grocery store. I quickly rummaged through my cupboards and fridge to see what I could throw together, and came up with a pretty tasty and impressive appetizer!
I didn’t have a lot of time, but luckily I do keep a nicely stocked fridge, so it was easy to whip this together. This is more of a tip with some instructions than a recipe, but I wanted to share it with you just the same!
I grabbed out pancake mix to start. I made up the batter and then made small thin pancakes, roughly the size of a Toonie. I used an icing bag to control the amount of batter and the size.
After they cooled, I put a thin slice of smoked salmon in it.
I then put on a dab of goat cheese and topped it off with some fresh dill. You could also use a caper but not everyone likes these, and they are a little-off putting to look at!
Some fresh ground pepper and voila! A pretty tasty little snack!
These are super easy to make, and pretty cost effective. You can make a tonne of them in advance and refrigerate. They pair well with a sweet white wine or a Prosecco too.
All this food talk is making me hungry. I think it’s time to start planning another party.
